Falafel Burger

That night I was craving a grilled cheeseburger BUT I took the high road and chose a healthy and responsible option instead. These falafel burgers were so filling and satisfying!

2 cans of drained and rinsed chick peas

1/2 bunch parsley

4 cloves of garlic

1/2 cup corn kernals (fresh or frozen)

1/2 cup flour

2 teaspoons salt

2 teaspoons cumin

Cracked Pepper

Splash of your favorite oil

Set oven to 375 degrees

Pulse all in the food processor until you can form a well mixed ball of it in your hand. This recipe should yield 6 buger-sized patties.

In a large hot pan, add 1/4 cup oil and fry three at a time for about two minutes on each side, just to brown and make it crunch!

Bake all in the oven for 10 minutes

You can eat this hamburgesa style, over rice, or salad. Try it with my vegan tzatziki sauce !
