Roasted Cauliflower & Broccoli with Curry ‘Aioli’ 🌱💚 inspired by one of my favorite dishes at Trust in Hillcrest, San Diego… gone VEGAN!
Vegan Curry Aioli 🌿
1/2 cup toffuti vegan sour cream
1/4 cup veganaise or just mayo
2 teaspoons Thai green curry paste
2 teaspoons Madras curry powder
1 teaspoon salt
1/2 bunch cilantro
Juice of half of a lime
Add all but cilantro to the blender
Blend well to combine and then add the cilantro
Blitz to finish!
Drizzle over roasted veggies, potatoes, or tofu!😍
