Brown Rice Jambalaya

Get up close & personal with some vegan jambalaya 😱🍲 with @lundbergfarms brown rice. Another one of my favorite grains grown by them. Wanna hear a short weird story? I once fixed a wedding cake that was smashed during transport, the bride’s family sent me a huge care package from their family business, Lundberg Farms. It was the first time I ever saw my name written as “Chef Brandi,” I’ll never forget it!!
Vegan Jambalaya 🍅🍚
2 Andouille Vegan Sausages
1/2 green pepper
1/2 red pepper
1/2 onion
1/2 bunch parsley
1 can diced tomatoes
2 cups brown rice
3 cups vegetable stock
2 teaspoons old bay seasoning
2 teaspoons cajun seasoning
2 teaspoons salt
Cook your rice first, in vegetable stock. 40 mins once it comes to a boil, keep it covered with the heat off for an additional 5min.
Julienne cut the bell peppers and onion
Slice the sausages on a bias
Chop the parsley
In a hot pan, brown the sausage pieces in a little oil, remove them from the pan, add a little more oil and sauté the peppers & onions
Once translucent, add the sausages back to the pan and pour in spices & tomatoes.
Bring to a boil and simmer for 4 minutes just to bring the flavors together.
Fold your rice and parsley into the mixture.
A big one pot meal to feed the masses or yourself for a week 🤓🌱🌈
