Tamale Pancake

Two words. Tamale Pancake. 🌽 This recipe is based on a dish I used to make during my line cook days…I’m so happy I could turn it vegan!! 

Tamale Pancake 🌽🥞🌿

2 cups masa harina (I love the @bobsredmill brand!)
2/3 cups flour
2 tsp baking powder
1 tsp salt
2 teaspoons cumin
2 teaspoons coriander
1/2 teaspoon chili powder
Cracked pepper
2 cups unsweetened almond milk
2 teaspoons, olive oil
1/2 red pepper, medium dice
1/2 yellow pepper, medium dice
1/2 green pepper, medium dice
1/2 yellow onion, small dice
1/2 bunch of cilantro, chopped

Preheat oven to 375 degrees
Combine all of the dry ingredients in a bowl, whisk together
Add all of the diced veggies and cilantro
Mix well to coat every piece
with dryness 🤓
Make a well in the center and pour in the almond milk and olive oil
Mix with a spatula until evenly mixed, the batter will be stiff but not dry.
Form burger sized patties and in a hot pan with a little oil, brown on each side for two minutes.
Bake in the oven for ten minutes to cook the center

The magic is you may have this for breakfast, lunch, or dinner 😈 I cant wait to try it with roasted corn or portobello asada 😍
