Quite possibly the easiest recipe on this blog will be crispy chickpeas! I throw these on my salads, avocado toasts, with rice noodles and just about anything else!
Crispy Chickpeas
2 cans rinse, drained, and well dried chickpeas
1 Tablespoon curry powder
2 teaspoons cumin powder
2 teaspoons coriander powder
1 teaspoon garlic powder
1 teaspoon onion powder
2 teaspoons salt
cracked pepper

Set your oven to 425 degrees and line a sheet pan with parchment paper
Rinse, drain, and dry the chickpeas, I roll them around between paper towels to dry them off. They will get crispier the dryer they are!
In a bowl coat them with all of the spices
Bake for about 40 minutes, shaking the pan at the half way point to roll them around a bit, when done they should be cracked and slightly browned

Ah I always wondered if these would work well without using oil. Do you use oil??

I don’t use any oil! Trying to use minimal amounts because it’s in everything! But they taste sooo good just like this 🙂
