Tahini Lemon Dressing

This recipe goes great on everything, salads, avocados, spring rolls! Nutty, lemony, and sweet-I dare you to not lick the whisk!!


Tahini Lemon Dressing

1 c. tahini (my new favorite product is Soom Organic single-source origin tahini)

Juice of 2 lemons

1 teaspoon onion powder

1 teaspoon garlic powder

2 teaspoons salt

cracked pepper

1 Tablespoon olive oil

Squirt of mustard (to help emulsify)

1 cup water


Combine all ingredients except the water, whisk together

The consistency will be quite weird at first, but add the water and whisk until smooth. If it is too thick, you can always add more water but start with little amounts at a time.

A few variations I have done with this recipe include adding fresh chopped herbs like dill, cilantro, or parsley. Spice it up with some smoked paprika or chili powder!

A few different ways to use this recipe-on a spring roll wrap, in a coconut kale salad, or my thai style salad!
